Innovation is a tricky thing. Especially in a tequila that aims to respect the purest traditional processes. That’s why it seems unlikely that nobody ever thought of distilling tequila high up the mountain. But yes, indeed Alto Canto is the first one… Up there at the Sierra del Tigre mountains, the air is cleaner, the water is more pure, and the lower atmospheric pressure favors the highest quality tequila ever imagined.
Only two ingredients:
Pure natural spring mountain water & carefully curated organic agaves.
Slow-cooked for 72 hours in our traditional masonry ovens. At this altitude, the cooking process is influenced by a crucial factor: water begins to evaporate at approximately 91°C, enhancing the texture and depth of flavor.

Honoring the traditional tequila-making process, the cooked agaves are crushed under the weight of a volcanic rock tahona, extracting their rich juices, which blend seamlessly with pure spring water.

Here, the magic of the mountains unfolds. We embrace bagasse in fermentation, unlocking its essence of flavors and aromas, while nourishing the yeast’s gentle dance, deepening the soul and intensity of our creation.

At this altitude, our double distillation in copper stills unfolds at lower temperatures, gently refining the alcohols while preserving the agave’s true essence.
The process carries bagasse, letting its soul linger as flavors intertwine and evolve. Crafted with intention, our stills guide this alchemy, drawing out the very heart of the spirit.

For maturation, we use new American white oak barrels in an adobe aging cellar, infusing the spirit with deep, earthy flavors. The stone floor enhances the mineral profile, while the wooden ceiling creates the perfect environment. Nestled among trees in the Sierra, the cold climate ensures a stable, naturally enriched maturation.
